Root Beer Float Cookies
I love root beer floats. I grew up in a town that still has an old fashioned drive in root beer stand so we were used to getting a really good root beer float. I recently took my nephew there and enjoyed a delicious root beer float! Making memories, he still talks to me about that day getting root beer floats!So, I was craving one of those floats and decided to make those flavors into a cookie. So here it a recipe for root beer float cookies.
Root Beer Float Cookies
Ingredients:
cookie portion:
1 cup butter or margarine softened( I use one stick of each)
1 1/2 cups sugar
1 tbsp root beer concentrate (I got watkins brand at walmart)
2 eggs
4 cups all purpose flour
2 tsp cream of tartar (in the spice isle not the condiment)
1 tsp baking soda
1/2 tsp salt
Frosting portion:
1/2 cup butter softened
3 cups powdered sugar
1 tsp vanilla
1/2 cup heavy whipping cream
Directions:
Preheat oven to 375 degrees.Starting with the cookie portion whip together the sugar and butter together until light and fluffy. Next add the eggs and root beer concentrate.
In a separate bowl sift together the flour, cream of tartar, baking soda, and salt. Slowly add this to the butter mixture until all combined.
Roll into about a 1 inch ball, place on a baking sheet and push down slightly in the center. Bake 14-16 minutes or until slightly golden. Cool completely.
With a mixer, whip together the butter and powdered sugar. add the vanilla. Next add the whipping cream. Beat well. top the cooled cookies with this frosting and ENJOY! #homemadeYUMMY
