One of my favorite things about this recipe is how simple it is. There are no fancy ingredients or complicated steps—just four everyday ingredients that come together to create a rich, creamy dessert everyone loves.

Ingredients

Cream Cheese – The rich, creamy base that gives these bites their classic cheesecake flavor.

Powdered Sugar – Sweetens the filling while keeping it smooth.

Vanilla Extract – Adds that warm, homemade cheesecake flavor.

Graham Cracker Crumbs – Mixed into the filling and rolled on the outside for the perfect cheesecake finish.

Four simple ingredients needed to make Easy No Bake Cheesecake Bites, including cream cheese, graham cracker crumbs, powdered sugar, and vanilla extract.
You only need four simple pantry and refrigerator staples to make these creamy cheesecake bites.

How to Make Easy No Bake Cheesecake Bites

Step 1: Mix the Filling

Beat the cream cheese, powdered sugar, vanilla extract, and graham cracker crumbs together until the mixture is smooth, creamy, and well combined.

Step 2: Roll into Bite-Sized Balls

Using a cookie scoop or spoon, roll the cheesecake mixture into evenly sized balls. If the mixture becomes too soft, refrigerate it for 15–20 minutes before continuing.

Step 3: Coat in Graham Cracker Crumbs

Roll each cheesecake bite in the remaining graham cracker crumbs until completely coated. This gives every bite that classic cheesecake crust flavor.

Step 4: Chill & Enjoy

Place the cheesecake bites in the refrigerator for at least one hour before serving. Chilling helps them firm up and gives them the perfect creamy texture.

Simplified Kitchen Tips

For perfectly round cheesecake bites, use a small cookie scoop and lightly dampen your hands before rolling. It keeps the mixture from sticking and makes shaping much easier.

For the best texture, chill the cheesecake mixture for 15–20 minutes before rolling if it feels too soft. A small cookie scoop also helps make every cheesecake bite the same size for even chilling and a beautiful presentation.

Storage

Store leftover cheesecake bites in an airtight container in the refrigerator for up to 5 days.

Can You Freeze Them?

Absolutely! Place the cheesecake bites on a baking sheet and freeze until firm. Transfer them to a freezer-safe container or bag and freeze for up to 2 months. Thaw overnight in the refrigerator before serving.

Easy Variations

Want to change things up? Try one of these delicious variations:

  • Roll in crushed Oreos instead of graham crackers.
  • Drizzle with melted chocolate.
  • Add a little lemon zest to the filling.
  • Top with fresh strawberries or blueberries.
  • Sprinkle with cinnamon for a warm cheesecake flavor.

Frequently Asked Questions

Can I make these ahead of time?

Yes! They’re actually even better after they’ve chilled for a few hours, making them the perfect make-ahead dessert.

Can I use low-fat cream cheese?

You can, but full-fat cream cheese creates the richest, creamiest texture.

Why are my cheesecake bites too soft?

The mixture probably needs a little more chilling time. Refrigerate it for 15–20 minutes before rolling.

Can I freeze cheesecake bites?

Yes! Freeze them for up to two months and thaw them overnight in the refrigerator before serving.

Today I am working on an adjustment to the recipe for dipping them in chocolate. My daughter wants them chocolate covered. Look for the recipe sometime over the next week.

I’m not fond of graham cracker crumbs (especially those that come in a box). I use crushed vanilla wafers. Yummy, yummy!! Gotta go to the store to get some vanilla wafers to try this luscious recipe!

I am not sure. When I made them they barely made it to the table! I would imagine they would last a few months. I would heat them up in the oven.

They didn’t last long in the freezer (because I knew they were there)! Mine were in there three weeks and they were just fine. No need to heat up because they won’t freeze solid (like ice cream).

So if this serves 8 people it would be 307 calories, 5 grams protein, 27 carbs, 20 fat.
