Watermelon Salsa Recipe

My watermelon salsa recipe is a little sweet and a little spicy. Its a great way to use up all that leftover watermelon or tortilla chips. Its also a great dish to serve during those hot summer months. 

We all know that watermelon is refreshing.  So why not eat it with chips as a refreshing snack or even meal. My kids devour this when I make it. They also request it often during the summer months. Who doesn’t love watermelon, specially in the summer months, when its hot and humid. 

Watermelon salsa has most of the flavors of salsa except it replaces the tomato with watermelon. I throw in some cucumber for freshness and flavor. You can omit the cucumber if you would like. This recipe is also customizable in the amount of heat you add. You can add more than one jalapeño or less than one. 

Watermelon Salsa Recipe:

Ingredients: 

  • 4 cups small diced watermelon 
  • 1 cup small diced cucumber 
  • 1/2 cup purple onion, diced
  • 1 orange (or other color) bell pepper, diced
  • 1 jalapeño finely diced
  • juice from 1 lime
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons fresh chopped cilantro 

Directions:

In a large bowl mix all ingredients. Serve chilled and Enjoy!
