  • 1 teaspoon salt

Cucumber

Don’t pour out the juice!

As this watermelon salsa chills, the watermelon releases more of its natural juices, which mix with the lime juice, cilantro, and seasonings to create an incredibly refreshing dressing. Around here, my husband claims that’s the best part and always drinks what’s left in the bowl. I have to admit…I usually beat him to it!

Ingredients
  

  • 4 cups seedless watermelon diced
  • 1 cup cucumber diced
  • 1/2 cup red onion diced
  • 1 orange bell pepper diced
  • 1 jalapeño finely diced
  • Juice of 1 fresh lime
  • 1 teaspoon to 1 tablespoon sugar or honey optional, depending on the sweetness of your watermelon
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh cilantro chopped

Instructions
 

  • Add the watermelon, cucumber, red onion, bell pepper, jalapeño, cilantro, salt, pepper, and fresh lime juice to a large bowl.
  • If your watermelon isn’t naturally sweet, stir in a little sugar or honey to taste.
  • Gently toss everything together until well combined.
  • Cover and refrigerate for at least 30 minutes before serving so the flavors have time to blend.
  • Give the salsa one final stir before serving to redistribute the flavorful juices released by the watermelon.
