Taco Lasagna A Simple Weeknight Dinner

My Taco Lasagna is a simple weeknight dinner that is sure to please the family. There are only a few ingredients needed and its so easy the children can get in the kitchen and help!

To make this I used Desert Peppers Cantina salsa and their Chile Con Queso. Their ingredients are simple and I can pronounce all the words! You can pick up Desert Pepper Salsas at: Sprouts, Publix,
Hannaford, Harris Teeter, Shop Rite, Walmart, Giant Eagle, Market Basket, Jewel, Meijer.

This recipe would also be delicious using shredded chicken. We topped ours with guacamole, more of that tasty Cantina Salsa, and sour cream. What topping will you add to yours?

Taco Lasagna

Layers of ground meat, beans, and queso make this dish an easy weeknight dinner idea.
Servings 6

Ingredients
  

  • 1 Pound Ground Beef Or your choice of ground meat
  • 1/2 tsp Each of Salt and Pepper
  • 1/2 tsp Cumin
  • 2/3 cup Desert Salsa
  • 1 can Refried Beans
  • 3/4 cup Desert Queso
  • 5 Flour Taco Shells
  • 1/2 cup Shredded Cheese Cheddar or Monterey Jack would work best.

Instructions
 

  • Preheat oven to 375. In a skillet brown the ground meat. Drain and add back to the pan. Add the salt, pepper, cumin, and salsa. Stir to combine.
  • In a microwave safe bowl, heat the refried beans.
  • in a casserole dish start layering with a flour tortilla.
  • Next add 1/2 the ground beef mixture and top with another flour tortilla
  • Follow that with 1/2 the refried beans and 1/4 cup of the queso
  • Repeat with another Tortilla, Beef mixture, Tortilla, refried beans and queso and a final tortilla. Add the remaining queso and the shredded cheese. Bake for about 20 minutes or until hot and bubbly.
