Easy Coffee Frosting #SundaySupper

I made this easy coffee frosting or (coffee icing if you prefer) to go on a mayonnaise cake  (chocolate). It whips up quick and easy.  The coffee flavor is perfect and its hardly sweet at all. I was eating the frosting all by itself and I normally scrap off the icing.  Great coffee flavor that doesn’t overwhelm your taste buds but entices them! Update:  This recipe was tested in Just A Pinches Kitchen and was given a Blue Ribbon! I was so excited to get the email that someone else loves my recipe as much as I do!

Recipe for Easy Coffee Frosting
Ingredients:
1 ½ sticks of butter (don’t skimp and use margarine)
1 heaping tablespoon instant coffee
1 pound powder sugar
2-3 tablespoons brewed coffee
Directions:


With a mixer, mix together the butter and coffee.

Now mix in the powdered sugar. Blend well. It may look a little crumbly. It’s ok.

Slowly add small amounts of the coffee until the frosting is the desired consistency.

Don’t worry those little bits of coffee don’t make the frosting gritty. They give it that amazing coffee flavo. Spread on cake and enjoy!
