Blueberry Popovers Recipe
A blueberry popover is an amazing little treat. Its a sweet eggy bread that when baked leaves a cavity. Its very similar to a bread pudding. You can fill the cavity or eat it straight out of the oven like we do! This recipe is pretty simple to make and only requires a few ingredients. I have made this with fresh blueberries and frozen and it comes out great either way. To achieve a fluffy dough DO NOT OVER MIX!
Ingredients:
2 eggs
1 cup milk
1 cup flour
1/3 cup sugar
1/2 teaspoon salt
1/2 cup blueberries (fresh or thawed frozen)
1 was pion powdered sugar (optional)
Directions:
Preheat oven to 425 and lower the rack to the 2nd lowest spot. Grease and flour a popover pan or oversized muffin pan. In a small bowl lightly beat the eggs.
Gently stir in milk and set aside. In a separate bowl combine the sugar, flour and salt. Stir the blueberries into the dry ingredients.
Combine the wet and dry. DO NOT OVERMIX. There can be some dry clumps. Mix very gently and only stir to combine.
Fill popover cups about 1/3 full and bake for 20 minutes.
Drop the temperature to 350 and bake an additional 15-20 minutes. Remove from oven and sprinkle with powdered sugar.
Serve while hot and enjoy!
