Kielbasa and Rice Casserole

Kielbasa and Rice Casserole

This is one of my “hamburger helper” type meals. Its fast and you can make it on that night you forgot to take something out. I always keep these ingredients in the cabinet anyway. I now make my black beans Recipe HERE and I usually use frozen corn. You can adjust it how you want. I usually start the rice and sausage at the same time and dinner is done in 20 minutes. An easy one skillet meal so little to clean up!

Ingredients:

1 package kielbasa (14 ounce)
1 large onion chopped (optional, I was out and didn’t want to run to the store)
1 tablespoon olive oil
1 can black beans with juice
1 can diced tomatoes
1 can corn DRAINED
1 (10 ounces) package yellow rice cooked according to directions
½ tsp garlic powder
1 tsp paprika
½ tsp salt and pepper

2 tablespoons ketchup

Directions:

Heat oil on high, add the kielbasa and onion. Cook until the onion is tender. Add the black beans (do NOT drain), tomatoes (do NOT drain), corn, ketchup, and seasonings.

Cook to a boil and reduce heat for 5 minutes. Pour over rice and stir to combine the ingredients.

      I wrote a comment on Pinterest, but I wanted to write another one here saying that this was a very delicious dinner! It made enough for my husband and I to have leftovers. I substituted smoked paprika for paprika and next time, I will double it because while I could smell it, I don’t necessarily taste it. We are kielbasa lovers in this house so thank you for giving me another recipe to use. I’m very interested in your website so I’m going to check back often!
