I am a pumpkin fanatic! I can’t get enough pumpkin. Don’t believe me, type pumpkin in my search bar and you will find quite a few of my recipes. These pumpkin pancakes are so lip-smacking good they don’t need any toppings! I did try one with some maple syrup and it was great, brought out the pumpkin flavor. My pumpkin pancakes are simple to make from pancake mix or a baking mix like Bisquick.

After making these for years I watched as my children still poured gallons of syprup over my delicious pancakes drowning them in sweetness. I decided that if I added a topping and left the syrup in the fridge this would stop the murder of my precious pumpkin pancakes. Perfect Pumpkin Pancakes Recipes

Ingredients:

1 cup pumpkin purée (canned pumpkin)

2 eggs

2 teaspoons pumpkin pie spice

1/2 teaspoon cinnamon

1-1 1 &1/2 cups milk

3 cups baking mix

Directions:

Mix together the pumpkin, eggs, pumpkin pie spice, cinnamon and milk. 

Put your skillet on medium high heat. Stir in the baking mix to the pumpkin mixture. Do not over mix or your pancakes won’t be light and fluffy.   

Pour on whatever size pancakes you like to make. I personally like big ones!

Heat until the edges start to look cooked or until the top starts to bubble. Flip and cook for 1-3 minutes. Or until the pancake is cooked. Repeat until all the batter is used. These freeze well too!

Bonus Gourmet Pecan Syrup Recipe:

Ingredients:

3/4 cup chopped pecans
1/4 cup butter
2 tablespoons brown sugar
1/2 cup maple syrup

Directions:

In a small skillet over medium heat melt butter with the pecans. Stir in brown sugar and reduce heat to medium low.

Cook until sugar is melted. Stir in maple syrup and cook for 1 minute

Serve over hot pumpkin pancakes and enjoy!
