Peppermint Meltaway Cookies is my youngest favorite cookie. She isn’t a chocolate fan and loves peppermint. These cookies are the perfect little bite of peppermint bliss that melts in your mouth.
I will be giving peppermint Meltaway cookies as part of my Christmas gift. Packages started going out yesterday to work and school. I think everyone will love the bold peppermint flavor in these perfect bites.
Peppermint Meltaway Cookies Recipe:
Ingredients:
- 1 Cup butter
- 2/3 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon mint extract
- 1/2 teaspoon salt
- 2 1/3 cups flour
- 1 bag Andes Peppermint crunchy chips
- extra powdered sugar for dusting
Directions:
In a medium bowl, sift together the salt and flour. Set aside.
In a mixer, cream together the butter and powdered sugar until light and fluffy. Add in the extracts. Stir until combined.
Slowly mix in the flour mixture. Mix in the Andes chips. Place in the fridge for an hour.
Heat oven to 350. Roll bite size pieces of cookie dough into balls, then roll in the powdered sugar.
Place on baking sheet with room for each one to cook.
Bake for 8-10 minutes. Serve and enjoy!
