Cuban Egg Rolls

Cuban Egg Rolls are made after one of my favorite sandwiches, the Cuban Sandwich.  These egg rolls are also part of a recipe contest with Twin Dragon Egg Roll Wrappers. I love their products and have used them for other recipes like my deep-fried pudding.

The Cuban Sandwich is a Florida thing. We have them on the menu at almost every restaurant. It is a mojo flavored pork, ham, swiss cheese and pickle on Cuban bread slathered in yellow mustard. The sandwich is pressed flat. We love this sandwich on game day or just to have but game day its even better!

That got me thinking and I decided this would be perfect fried in an egg roll wrapper for a gameday snack. These Cuban Egg Rolls can be fried or baked whichever you prefer. They come out delicious either way and I included directions for both ways.

Cuban Egg Rolls Recipe:

Ingredients:

  • 2 cups mojo pork pulled (recipe here)
  • ½ sliced deli ham (I used black forest), diced.
  • 8-10 slices swiss, diced.
  • Packed ½ cup finely diced dill pickles
  • ¼ cup plus 3 tablespoons mustard
  • 1 cup mojo
  • ½ teaspoon salt
  • Oil for frying

Directions:

In a small saucepan combine ¼ cup mustard (reserve the 3 tablespoons for later), 1 cup mojo, and the salt. Heat over medium heat until it starts to boil. Reduce the heat to low and simmer for 5-7 minutes. Set aside. This is your dip for serving.

Mix the pork, ham, swiss, pickles and 3 tablespoons of mustard in a medium sized bowl.  This is your filling.

Grab a small shallow bowl and fill with water. This will be your glue for the egg rolls.  Lay an egg roll wrapper out flat. Add about 3 tablespoons of the filling in a log shape along the center.  With your finger wet all the edges of the wrapper. Fold one end over and then the sides. Roll it up. Set aside and continue with the remainder of the filling.

Fried Directions: Heat oil over medium-high heat. Fry the egg rolls a few minutes on each side until lightly golden brown. Serve hot with the dip and enjoy!

Oven baked directions: Heat oven to 400. On a baking sheet lined with parchment paper place egg rolls. Brush with a little oil and bake for about 15 minutes or until lightly golden brown. Serve hot with the dip and enjoy!
