Coconut shrimp with pineapple sauce is so easy to make that my 12 year old made it! The coconut comes out so crisp and the pineapple sauce just makes it amazing.  Its like pina colada shrimp! Super yummy!

Coconut Shrimp with Pineapple Sauce Recipe: 

 

Ingredients:

Coconut Shrimp:

1 1/2 pounds of peeled and divined shrimp

1/2 cup flour

3/4 cup breadcrumbs

1 cup coconut

4 eggs

oil for frying

Pineapple Sauce:

2 tablespoons butter

3 cups pineapple juice

2 tablespoons cornstarch

2 tablespoons pineapple juice

Directions:

In a shallow dish mix together the flour and breadcrumbs. Now mix in the coconut.

In a separate dish mix the eggs well.  Heat oil in a skillet over medium heat.

Now dip the shrimp into the eggs, shake a little to remove the excess, and place in the coconut mixture. Coat both sides well.

Fry on each side until golden. Remove and drain

Pineapple Sauce:

In a separate fry pan, melt the butter. Stir in the cups of pineapple juice and heat until the juice is hot.  In a small bowl or cup mix together the spoons of pineapple juice and cornstarch. Whisk this into the hot pineapple juice and butter until its thick and bubbly.

I plated some sauce and then placed the shrimp on top. You could also serve on the side. #homemadeYUMMY
