Banana Cupcakes
- 2 large eggs separated
- 1/3 cup milk
- 1/2 cup butter softened
- 1 cup sugar
- 2 cup flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup banana mashed
- 1 tsp vanilla
Peanut Butter Frosting
- 1/2 cup butter softened
- 1 cup peanut butter
- 1 1/2 cups powdered sugar sifted
- 2 tsp milk optional
Instructions

- {reheat oven to 375 degrees. Mix together the dry ingredients. (Flour, baking power, baking soda, and salt) in a medium mixing bowl and set aside.
- Cream together the butter and sugar in a larger mixing bowl. Once lighter in color and fluffy, add egg yolks and vanilla.
- Mash the bananas and set aside
- In a separate bowl Beat egg whites until stiff. Set aside
- Alternate adding milk and dry ingredients to the creamed sugar mixture. Do not overmix. Add banana and mix just to combine.
- Fold in egg whites. DO NOT OVERMIX or STIR.
- Scoop into cupcake lined pan and bake 17-22 minutes or until a toothpick comes out clean.
Frosting Directions
- In a mixing bowl beat the butter until lighter in color and fluffy.
- Add Peanut butter and beat about 2 minutes.
- Slowly add powdered sugar. If the frosting is to stiff add milk by the teaspoon.
