Banana Cupcakes with Peanut Butter Frosting (Elvis-Inspired Dessert)
These banana cupcakes with creamy peanut butter frosting are soft, moist, and full of nostalgic flavor. Inspired by Elvis’s famous love for bananas and peanut butter, this dessert is a fun, indulgent twist on a classic comfort treat.
Banana Cupcakes
- 2 large eggs separated
- 1/3 cup milk
- 1/2 cup butter softened
- 1 cup sugar
- 2 cup flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup banana mashed
- 1 tsp vanilla
Peanut Butter Frosting
- 1/2 cup butter softened
- 1 cup peanut butter
- 1 1/2 cups powdered sugar sifted
- 2 tsp milk optional
Cupcake Directions
{reheat oven to 375 degrees. Mix together the dry ingredients. (Flour, baking power, baking soda, and salt) in a medium mixing bowl and set aside.
Cream together the butter and sugar in a larger mixing bowl. Once lighter in color and fluffy, add egg yolks and vanilla.
Mash the bananas and set aside
In a separate bowl Beat egg whites until stiff. Set aside
Alternate adding milk and dry ingredients to the creamed sugar mixture. Do not overmix. Add banana and mix just to combine.
Fold in egg whites. DO NOT OVERMIX or STIR.
Scoop into cupcake lined pan and bake 17-22 minutes or until a toothpick comes out clean.
Frosting Directions
In a mixing bowl beat the butter until lighter in color and fluffy.
Add Peanut butter and beat about 2 minutes.
Slowly add powdered sugar. If the frosting is to stiff add milk by the teaspoon.
