Microwave Udon Noodles

Microwave Udon Noodle soup was created on cold Florida day. We don’t get a lot of cold days and when we do, I want soup. I was going to be stuck at work all day with no stove. So I quickly prepped everything and threw it in plastic container. I also wrapped a microwave safe bowl in a kitchen towel.  This microwave udon soup ended up being my favorite meal For lunch.

My recipe is meant to be versatile. I used what veggies I had in the fridge. You could mix it up and throw in celery, peppers, and radish for just a few ideas. This recipe is actually entering JSL’s food Fortune Noodle Blogger Recipe Challenge. I have another great stir fry recipe I will be posting in the future so stock up on those noodles now!

Ingredients: 

1 pack Fortune udon noodles with seasoning pack

1 small carrot sliced thin

1 green onion sliced

1/2 chicken breast,cooked and diced

1/4 cup broccoli chopped

1/2 tsp fresh ginger grated 

1 soft boiled egg, cut in half

Water according to udon noodle package
Lime wedge for serving

Directions:

In a microwave safe bowl, add all ingredients except the egg and lime wedge. Heat for 2 minutes. Stir well Add egg and a squeeze of lime. Enjoy!
