A meal can be almost as good as a photo album. We tend to remember a lot of memories surrounded by food. Manwich is one of those foods for me. It brings back a flood of memories of my childhood. My mom worked nights and dad had to cook for us! Manwichwas the first food he made that wasn’t burned! We ate A LOT of Manwich until he learned to cook more. ReadySetEat enewsletter
As an adult I forgot about how good a sloppy joe could be. I got the 3 types of Manwich and decided to give it a try again! The original kind was on our plates first for a slumber party. We ate it with potato chips and used some of the meat for a dip just like I used to as a kid. They all LOVED it! The next time I used the thick and chunky one for a quick meal before archery practice. Again the pan was cleaned completely! This kind was my favorite.
The third kind was the bold. I decided to get creative and make a new twist on an old favorite my grandma used to make. Manwich Porcupine Meatballs! They came out FABULOUS! The kids ate them straight out of the pan without utensils! These are a great appetizer or serve them with a side of rice and veggies for a complete meal! Its also a kid-friendly recipe that the kids will love to eat and help make! There are more recipes at Manwich Mondays Recipes
Manwich Porcupine Meatballs Recipe:
Ingredients:
1 pound ground beef
1 egg
1 cup cooked rice
1 can manwich (1/2 cup manwich in the meatballs, reserve remainder of can for later)
1/2 cup bread crumbs
2 tablespoons oil
1/3 cup water
Directions:
Mix together the beef, egg, rice, 1/2 cup manwich, rice, and breadcrumbs. Make sure it is mixed well. Shape into balls
Heat oil on medium-high in a skillet that has a lid. Brown the meatballs in a few small batches until all are browned on two or three sides. Remove to a plate.
With pan on high heat, add the water. Quickly take a wooden spoon and scrap off the little bits stuck to the pan. Stir in the remainder of the can of manwich.
Place meatballs back in the pan and stir gently to coat them all. Put the lid on and turn heat to low. Simmer for 10 minutes. Serve and Enjoy!
