Day 28: Anise Hard Candy
Anise candy always reminds me of my mom. I remember her standing over the stove making it on Christmas Eve. She would put green food coloring in it and I would have to try my best to be patient as she made it.
Anise Hard Candy
Ingredients:
2 cups sugar
2/3 cup corn syrup
1 cup water
Dash of salt
¼ tsp anise extract
Green food coloring
Directions:
Grease a cookie sheet well and set aside. In a small saucepan; combine all the sugar, corn syrup, water, and salt. Stir over medium heat until It reaches a boil.
Once it boils DO NOT STIR again until it is done. Reduce heat to low. This slows the process but keeps you from having a dark amber colored candy.
Using a candy thermometer and cook to 300 degrees. Remove from heat and stir in extract and food coloring. Quickly pour onto the prepared cookie sheet and let cool.
Once it cools break into pieces. Enjoy
