Bleu Cheese “Nacho” Chips
Bleu Cheese “Nacho” Chips aren’t on your standard tortilla chip. They are actually served over kettle cooked chips. These flavors all compliment each other so well you will have a hard time not eating the entire plate yourself.
These Bleu Cheese Nacho chips have bacon and you really can’t go wrong with bacon. Add some green onions and Bleu cheese crumbles and its pretty good. The magic touch really comes from the drizzle of balsamic reduction.
You can make your reduction or look for a bottle that’s already reduced like I do. This recipe is fast and easy and you can have it on the table in about 15 minutes. How’s that for a delicious and stunning appetizer or side dish. Bleu cheese nachos will be a favorite for the Bleu cheese lover in your house.

Bleu Cheese Nacho Chips Recipe
Ingredients:
2 Tablespoons Bacon grease or butter
2 tablespoons flour
2 cups half and half (you could use milk)
1 cup Monterey Jack Cheese
1/2 cup Bleu cheese crumbles
1 bag kettle cooked chips
3 green onions, sliced
Bleu cheese crumbles
Balsamic reduction
4-6 Thick cut bacon, cooked and crumbled
Directions:
In a skillet with high sides, mix the bacon grease and flour together. Brown for a minute of two on medium heat.
Whisk in the half and half and stir until it begins to thicken. Add in the Monterey Jack cheese and 1/2 cup Bleu cheese. Reduce heat to low. Stir until the Monterey Jack is all melted and the Bleu cheese is mainly melted.
Place a nice pile of chips. Pour cheese sauce over chips, top with Bleu cheese crumbles, bacon crumbles, green onion. Drizzle the balsamic reduction over. Serve immediately and enjoy!
