Italian Wedding Soup Recipe

My daughter Margaret and really like Italian Wedding Soup. We will sometimes open a can of it for lunch. Well I decided that I would make it homemade. Its got to be better right? Well it was. Even my none soup eaters quickly gobbled this up!

Italian Wedding Soup Recipe:

Ingredients:

1 pound ground beef
1/3 cup bread crumbs
1 egg
¼ teaspoon Italian seasoning
12 cups chicken broth
Bag of baby carrots (1 pound)
½ pound of frozen spinach thawed and drained well
¾ of a box of pasta

Directions:

Preheat the oven to 375. Mini meatballs first: mix together the ground beef, bread crumbs, egg, and Italian seasoning.

Once thoroughly mixed roll into small meatball (like nickel sized). Place on a baking sheet and bake for about 30 minutes.

Place broth in a large pot. Cut the carrots in half and place in with the broth. Add in the spinach and meatball. Bring it to a boil on high then reduce heat to low. Let it simmer for about 20 minutes. Then add your pasta and cook until it’s all tender. 

Serve it with some French bread for a European treat lol!
