Succulent Crockpot Beef Stew

Crockpot recipes are so awesome. I love to get dinner started early. It is wonderful to have very little to do at dinner time. Only to ladle out some succulent crockpot beef stew! I believe that I enjoy the food more when I am not slaving over the heat right before we eat. This succulent crockpot beef stew is a MUST TRY! You can even skip the browning step if your in a hurry and put all the veggies in at the same time as the beef.

Crockpot Beef Stew

 

Ingredients:

3 pounds beef stew meat or buy a beef roast and cut it yourself.
3 tablespoons olive oil
6 cups water
1 large onion, chopped in large pieces
6 medium/large potatoes, cut into large bite sized pieces
7 carrots, cut into large bite sized pieces
1 clove garlic grated or finely diced
1 tsp each salt and pepper
2 tablespoons cornstarch mixed with 2 tablespoons cold water

  Directions:

In a large skillet, add a tablespoon of oil, heat on medium-high. Brown 2 sides of the beef. (this helps to hold the meat together as it cooks, Its that tender)

Once browned put it in your crockpot. Add the water, onion, garlic, potatoes, carrots, and salt & pepper. Turn of high for 4-6 hours or low for 6-8 hours.

Add the cornstarch mixture before serving to thicken the juices a little. Serve and Enjoy.
