I made these Cranberry White Chocolate Cookies for my road trip to World Food Championships. I like to take a nice sugar rush for a long ride to keep me singing at the top of my lungs.

I will be traveling from North East Florida to Orange Beach Alabama to cook with as a Sous Chef for a few friends of mine. Also to do an amazing cooking demo and be a Cheferre. World Food Championships is the biggest and best food competition in the world! To get there you have to win in a prequalifying event. It’s where the best chefs, home cooks and food lovers compete against each other in different categories.

One thing I have learned competing at WFC is to use the best products to get the best food. You can’t skimp and use cheap. Now the best products don’t always cost the most. You want to look for some important aspects like real ingredients, no hormones, additives, how its made.

Cranberry White Chocolate Cookies Recipe

Ingredients:

2 sticks Challenge Butter, softened
1/2 cup of brown sugar
1/2 cup white sugar
2 eggs
1/2 teaspoon orange extract (optional)
2 1/2 cups flour
1 teaspoon baking powder
1 teaspoon salt
1 cup lightly packed chopped dried cranberries
1 cup white chocolate chips

Directions:

Preheat oven to 375 degree’s.
In a medium bowl sift together the flour, baking powder, and salt.

In a mixer whip up the butter. Add in both brown and white sugar. Mix on high until its fluffy. Add in one egg. And mix until completely combined. Add the remaining egg and orange extract.

Slowly add the flour mixture until its all combined. Do not over-mix. Add in the cranberries and white chocolate chips.

Place on a baking sheet and bake for 9-12 minutes or until golden. Eat right away or let cool and keep in a storage bag. These freeze well also. Enjoy!
