Chicken Fried Rice
This Chicken Fried Rice recipe is perfect for leftover chicken. The other ingredients I usually have on had. I have even used shredded baby carrots to make this too! I love recipes that use leftovers. Makes dinner so much simpler while using up stuff I would of probably thrown away. You can also use leftover rice. It’s also great to keep in the fridge and warm up a bowl whenever your hungry.
So here is a question. Can you use chop sticks to eat rice? I can and about half of my family can. It’s fun to practice and provides many laughs around the table as everyone attempts to get bites of their dinner.
Chicken Fried Recipe
Ingredients:
6 cups cooked rice
1 cup Julianne carrots (or shredded)
1 cup frozen peas
1 cup onion, chopped
2 cups chopped chicken, cooked
4 eggs, scrambled and cooked
1/4 cup soy sauce
2 tablespoons oil, I used sesame oil
Directions:
In a large bowl mix together the rice, carrots, peas, onion, chicken, and eggs.
Drizzle with the soy sauce and mix thoroughly.
Heat a skillet with 1 tablespoon of oil on medium high heat. Add in rice and fry for 2 minutes. You can cook a few batches with the oil before you add the other tablespoon of oil. Serve hot and enjoy!
