Brandy Pecan Sandies

Brandy Pecan Sandies is my updated version of the old fashioned treat everyone knows. I decided to add some brandy to the batter. Why stop there, so I added brandy to the pecans and candied them! 

These Brandy Pecan Sandies are going to be added to my Christmas baking for gifts this year. If you don’t already know I bake tons of gifts from the day after Thanksgiving until Christmas Eve. These are the gifts I give to friends and neighbors. This year I have gone a little extra with the booze in a bunch of my Christmas Goodies. They also freeze well so if you happen to have any extra you want to save for another day.

Brandy Pecan Sandies Recipe 

 Ingredients: 

Candied Pecans:

  • 1 cup chopped pecans 
  • 1/2 cup brown sugar
  • 1/4 cup brandy
  • 1/2 stick butter
  • pinch of salt

Cookie:

  • 1 cup butter 
  • 1/2 cup powder sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 tablespoon brandy 
  • 2 cups flour 
  • 1 teaspoon salt 
  •  1 teaspoon baking powder

Directions: 

Start with the candied pecans. In a small saucepan mix together the brown sugar, brandy, butter and salt. Cook on medium low for about 2 minutes. Stir in pecans and pour onto a baking sheet to cool.

Now the cookie part. Sift together the flour, salt, and baking powder in a medium bowl. Set aside. 

 Cream together the butter and both sugars with a mixer. Add the egg and mix well. Add the brandy and mix until combined. 

Gradually mix in small amounts of the flour mixture.  Stir in the pecan mixture.  Chill the dough covered for about an hour. 

Preheat oven to 375. Drop spoonfuls on a baking sheet leaving room for them to spread a little. Bake for 10-12 minutes or until golden.
