Blueberry Shortbread Thumbprints
I can remember helping my grandma make thumbprint cookies as young child. Getting to smash each little ball was fun! I decided that a nice shortbread cookie would be good with some Blueberry jam baked into the centers. These are great year round but were created to go in my Christmas cookie collection that I make every holiday season. I hope you enjoy these blueberry shortbread thumbprints as much as we did.
Blueberry Shortbread Thumbprints
Ingredients:
2 cup butter
1 1/3 cup sugar
2 tsp vanilla extract
4 cups flour
10 ounces blueberry jam
Directions:
Preheat oven to 350.
Mix together the sugar and butter until light and fluffy. Add vanilla and beat well again. Now stir in the flour in small amounts until all the flour is combined
Roll into 1/2 to 1 inch balls. Flatten with your thumb and fill thumbprint with blueberry.
Bake for 12-17 minutes or until lightly golden brown on the edges.
Remove and let cool.
