Black Beans in the Crockpot
We use a lot of black beans. I love to make my black beans in the crockpot. They are a great source of protein. I put them in our taco meat, over rice, and so many other meals. I can make them in the crockpot and separate them into bags to freeze and use just like a can. So simple to make and they are tasty!
Ingredients:
1 (1pound) bag black beans, rinsed and bad ones picked out
1 medium onion chopped
1 clove garlic chopped
1 bell pepper (or hotter if you like) chopped
5 cups water or broth
2 bay leaves
1 tsp paprika
1/2 tsp cumin
1/2 tsp each salt and pepper
Directions:
Place all ingredients in the crockpot and cook on low for about 8 hours or until tender. There should be a gravy to the beans. You may need to add a small amount of water. (remember not to take the lid off to much, causes the crockpot to loose to much heat).
Once the beans are cooked remove 1 1/2 cups of the beans (with the juices) and place in a food processor. Blend until smooth and return to the pot of beans. Stir this in and serve over rice and freeze some for later use.
