Cuisine American
- 4 cups seedless watermelon diced
- 1 cup cucumber diced
- 1/2 cup red onion diced
- 1 orange bell pepper diced
- 1 jalapeño finely diced
- Juice of 1 fresh lime
- 1 teaspoon to 1 tablespoon sugar or honey optional, depending on the sweetness of your watermelon
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons fresh cilantro chopped
Add the watermelon, cucumber, red onion, bell pepper, jalapeño, cilantro, salt, pepper, and fresh lime juice to a large bowl.
If your watermelon isn't naturally sweet, stir in a little sugar or honey to taste.
Gently toss everything together until well combined.
Cover and refrigerate for at least 30 minutes before serving so the flavors have time to blend.
Give the salsa one final stir before serving to redistribute the flavorful juices released by the watermelon.
Serve chilled with tortilla chips, grilled chicken, grilled fish, or fish tacos. For extra flavor and protein, sprinkle with crumbled feta cheese before serving.
