Peanut Butter Pudding Parfait

with

Chocolate Whipped Cream

Peanut Butter Pudding Parfait with Chocolate Whipped Cream came to me in a dream. What you don’t dream about food? Some of my best recipes are created in my sleep! Ok so back to this parfait, I decided to enter a recipe contest by The Florida Dairy Farmers through Food Wine Conference.  Check out the hash tags #makeitwithMILK #FWCon.  The challenge is to create an original recipe with at least 1 cup of milk and 1 cup of dairy product. I knew I could come up with something and that night I dreamed on this. The problem was I couldn’t remember enough of the dream only a fuzzy picture. For days and days I tried to recall the dream and what waist those little containers.
Yesterday I decided to give up and make something else. After writing a recipe for hamburger gravy (I will post it another time) it all came to me. I would create an amazing peanut butter pudding and top that with whipped cream. And boy did I create an amazing peanut butter pudding! I have never had peanut butter pudding before I do believe mine is the best haha. Try the recipe and tell me if you agree!

Peanut Butter Pudding & Chocolate Whipped Cream Parfait Recipe

Ingredients:

2 cups milk (I used 2%)
3/4 cup creamy peanut butter
3/4 cup sugar
1/4 cup cornstarch
1 1/2 cup heavy whipping cream
3 tablespoons cocoa powder
1/2 cup sugar
16 Chocolate cream cookies with the cream removed and cookies crumbled.

Directions:

In a small bowl combine 3/4 cup sugar and the cornstarch. Set aside. In a medium sauce pan heat milk and peanut butter over medium heat stirring constantly. Once the peanut butter is melted add the cornstarch and sugar mixture. Continue to stir and cook until it is the consistency of pudding. Pour into a medium sized bowl and chill in the fridge. peanutbutterpuddingparfait5
In a small bowl combine the remaining sugar and the cocoa, set aside. In a mixing bowl pour the heavy cream and beat on high until it begins to thicken. Add the cocoa mixture and beat until stiff peaks form.
Serve in layers of cookie crumbs, pudding, whipped cream. Keep cold until ready to eat and enjoy! #HomemadeYUMMY
