Ganache Filled Cupcakes with Ganache Frosting

Ganache filled cupcakes with ganche frosting. These are super chocolaty! Perfect for that PMS craving! I made these up in honor of National chocolate cupcake day!

Ingredients:

24 Chocolate cupcakes baked and cooled
Ganache
1 package semisweet chocolate chips
2/3 cup heavy whipping cream
Frosting
2 sticks butter
1 pound powdered sugar
1/3 cup cocoa powder
½ cup of reserved ganache (from step 2)

Directions:

Ganache filling is the first thing to make. In a small saucepan, over the lowest heat setting, melt chocolate chips while stirring constantly. Once melted pour in whipping cream. Let it cool to room temperature before making frosting. That’s it, you made Ganache!!! Super easy huh? Remove ½ cup of the ganache and set aside.
Cut a hole in the cupcake. (you can visit Pumpkin filled cupcakes to see the steps) Remove the center. Fill with ganache filling and replace center cap.
In a mixer beat butter until fluffy. Sift together powdered sugar and cocoa powder. Add this to the butter and beat until well combined. Add the ½ cup ganache and beat again until combined. Top the cupcakes and ENJOY!
