Mango, Avocado, and Salt Fish Salad Recipe

Mango, Avocado, and Salt fish recipe is SUPER versatile! Use it as a perfect appetizer, spread it between two pieces of bread for a sandwich, or better yet as a casserole! No matter which way you choose to make it you will love the simplicity and flavors.

Salt fish is available at most supermarkets. Just make sure you follow the directions and soak your salt fish. I cannot stand mango. The texture and flavor are repulsive to me. So why did I add mango, well its quite easy: my family loves it. I actually loved the sauce to this recipe even with my severe dislike of mango. I could eat it in place of mayonnaise.

Mango, Avocado, and Saltfish Salad Recipe

Ingredients:

2 tablespoons avocado oil
1 package salt fish, cut into bite sized pieces
1 teaspoon ground ginger
1 teaspoon garlic powder
1/4 cup finely diced avocado
1/4 cup finely diced mango
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/2 teaspoon garlic powder
1/2 teaspoon fresh thyme leaves, chopped
1/4 cup avocado oil
1/4 cup finely diced red pepper
1/2 cup diced mango
1/2 cup diced avocado

Directions:

As per the directions on the package: Soak your salt fish for eight hours, draining the water at least 3 times.

Start with a skillet on medium high heat, add the 2 tablespoons oil. While the oil heats. Season the salt fish with the ginger and garlic.

Once the oil is rippling hot, add the fish. Cook for 5 minutes on each side. Drain and cool in the fridge while you make the sauce.

In a mortar and pestle, or in a bowl, mash the 1/4 cup finely diced avocado and mango together with the 1/2 teaspoon salt, ginger, garlic and fresh thyme. Once mashed slowly pour in the 1/4 cup avocado oil.

Mix together the fish, sauce and remaining ingredients. Serve over crostini, between a few slices of bread, or over chilled pasta and Enjoy!
