Instant Pot Butternut Squash Sauce

Instant Pot Butternut squash sauce can be used over any pasta. I wanted something easier on my stomach than tomatoes. Also my family isn’t the biggest fans of cooked tomatoes. That made this Butternut Squash Sauce recipe perfect for my family. I added ground turkey sausage to make it even healthier than it already is with all the fresh ingredients. I choose organic ingredients, but you what you have or want.

Cooking this butternut squash sauce in the instant pot makes it come out fast but taste like you cooked it ALL day! You could also make it on the stove all day if you don’t have an instant pot or pressure cooker. *Just follow the directions below and when it says to set it in the pressure cooker cook bring it to a simmer on the stove and then reduce the heat to low, cover and cook for at least 3 hours, stirring occasionally. Follow the rest of the directions. *

We serve this Butternut Squash Sauce over a delicious healthy pasta like quinoa or rice. My family is pretty picky about changing out anything for healthier options and this is one I was able to pull off! I have made it several times since I originally wrote this recipe and they gobbled it up every time!
Butternut Squash Sauce Recipe

Ingredients:

2 tablespoon coconut oil
3 cups peeled, diced butternut squash
2 tablespoon tomato paste
1 large diced onion
2 pound turkey sausage
8 cups skinned diced tomatoes
2 teaspoons minced garlic
1 cup vegetable stock
2 tablespoon brown sugar
1 teaspoon salt and pepper
1 1/2 tablespoon fresh basil
1 1/2 tablespoon fresh sage

Directions:

Directions above for stove top. See the *In your instant pot with it on the sauté setting (if yours doesn’t have one just brown it in a skillet) add the coconut oil and butternut squash.

Cook for about 15 minutes. Add in diced onion and tomato paste cook for 5 more minutes stirring often. Remove squash and brown the turkey sausage. Reserve half after its browned and set aside.

Stir the butternut squash back into the instant pot with the first half of the turkey sausage. Add in the remaining ingredients (except the browned sausage that is reserved).

Set instant pot to pressure cook for soup for 1 and 1/2 hours. Do a fast release, (let the steam out yourself) Use an immersion blender and blend until almost smooth.

 

Add in the reserved turkey sausage and serve over hot pasta. Enjoy!
