Halloween Treats!

Eyeball Peanut Butter Crispy’s

I love Halloween! It reminds me of my mom. She always went all out on our costumes and even her own. Sometimes we even had themes for the family, her and I were rabbits and my baby sister was a carrot!
We attend a homeschool halloween party every year. I always try to make something fun to eat. Over the years I have made eye balls, pumpkin shaped carrot tray, snake sandwich and now I can add “butter”fingers to the list!
Here is a my recipe for “eyeball” peanut butter crispy’s.

Eyeball Peanut Butter Crispy’s Recipe:

Ingredients:

2 cups creamy peanut butter
1 cup margarine or butter
2 tsp vanilla
2 1/2 cups powdered sugar
6 cups rice crispy cereal
1/2 pound white coating (fake chocolate)
medium sized bag of M&M candies (regular size)
red food coloring gel (optional)

Directions:

Using a blender cream together the vanilla, butter, and peanut butter. Now add the powdered sugar in small amounts until its all worked in.
With a wooden spoon stir in the cereal. Shape into balls just under 1 inch size place on a cookie sheet lined with foil. place the balls in the freezer until firm. A few hours or overnight.

Melt white coating in a double boiler or a small pan filled with water and a metal or glass bowl in it with the chocolate in the bowl.
Dip each ball in the coating, gently shake off excess coating, and set on foil lined cookie sheet again. Place m&m candy (m side down) in the center. Let cool until coating hardens.
You can serve them this way. We call them Mr Potato Head eye’s. We like to make them more scary and add some bloodshot lines to the eyes. Using a toothpick dipped in the food coloring gel draw veins and small blood clots. Serve and enjoy!
