Pasta Salad #Tresomega

This Gluten Free Italian Caprese Pasta Salad is made with Tresomega Nutrition Organic Quinoa Pasta. I love that Tresomega Nutrition Pastas are Gluten Free because I have a few friends that are GF and I like to bring things they can eat to our pot lucks. I also like to give my family a healthy alternative to pasta. My picky son couldn’t even tell the difference and his taste buds can always tell when I sneak in healthy stuff.

I love a Caprese Salad. The combination of basil, tomato, and mozzarella is just perfect with balsamic vinegar. I decided it would be perfect to add to this pasta salad. I then spotted some Italian dry salami and knew it had to go in this dish too! I hope you enjoy this as much as we did.

Gluten Free Italian Caprese Pasta Salad Recipe

Ingredients:

8 ounces Tresomega Organic Quinoa Pasta, Fusilli
1/4 cup balsamic vinegar
1 tablespoon Tresomega coconut oil, melted
4 ounce pearl Mozzarella (or fresh mozzarella cut into small pieces
4 large basil leaves chiffonade (cut into thin ribbons)
1/2 cup cherry tomatoes, cut in half
1/2 cup Italian dry salami cut into quarters before measuring

Directions:

Cook your Tresomega Fusilli according to the directions. Immediately after pasta is cooked drain and run cold water over the pasta to cool.
In a medium sized bowl mix together the melted Tresomega coconut oil and the balsamic vinegar.
Toss the pasta with the balsamic vinegar. Add in the remaining ingredients and gently toss.
Serve room temperature or chilled and Enjoy!
