Chicken Stir Fry Soup

Chicken Stir Fry Soup is a very rich in flavor asian soup that has all the flavors of chicken stir fry. My family calls it fancy ramen soup. For this recipe I grilled the chicken but you could sauté or even bake it if you didn’t want to grill. I live in Florida and tend to use my grill a LOT. Less mess and less fat, I can’t go wrong.

There are a few different components to this recipe and the list of ingredients seems long. Some ingredients are being repeated in each step. This soup is so very delicious that its worth the little extra effort that goes into it. We have eaten it 3 times and every time I go to Target the kids beg me to get the JSL Udon noodles to make it again!

Chicken Stir Fry Soup Recipe:

Ingredients:

Marinate
1/4 cup sesame oil
2 tablespoons rice vinegar
1 tablespoon fish sauce
2 teaspoons five spice
1 tablespoon minced garlic
2-3 chicken breasts

Broth
2 boxes of chicken stock
2 inches lemon grass (each cut in half) optional
1 tablespoon minced garlic

Stir Fry
1-2 tablespoon sesame oil
1 cup broccoli
1/2 sliced rainbow carrots
1 cup sugar snap peas
1 cup bean sprouts
1/2 cup baby corn chopped in bite size pieces

1 cup sliced green onion
2 packages chicken Udon Noodles with seasoning packages
black sesame seeds for garnish (optional)

Directions:

In a resealable freezer bag prepare your marinade. Mix together the sesame oil, rice vinegar, fish sauce, five spice and garlic. Add the chicken breasts and let sit for at least 30 minutes.
While your chicken is marinating start the broth in a large pot. Add the chicken stock, lemon grass and garlic. Cook for 10 minutes on medium heat.
Cook your chicken. I cooked mine on the grill but you could sauté or bake it. Once it is cooked let it rest and start preparing your stir fry potion.


With a pan on Medium high heat add 1 tablespoon of sesame oil. Add the broccoli and cook for 3 minutes remove and place in soup. Continue cooking the vegetables (not the green onion) and placing them in the soup after about 3 minutes each,
Next cut your chicken into bite sized pieces and place in the pot of soup. Stir in the seasoning package from the Udon Noodles packages. Now add the noodles and green onion. No need to break them up that will happen as the cook. Place the lid back on and cook for 2-3 minutes. Garnish each bowl with a sprinkle of black sesame seed and Enjoy!
