Veggie link Creamy Tomato Soup was created to entire into Big Mountain Foods Recipe Challenge. My family loves soup specially on a cold winter day. I made this for my daughter and I for lunch. We both devoured our bowl.

Veggie Link Creamy Tomato Soup Recipe

Ingredients:

  • Big Brat Veggie links
  • 2 tablespoons flour    
  • ½ cup water
  • 1 teaspoon Italian seasoning
  • 2 ½ tablespoons tomato paste
  • 2 teaspoons vegetable base
  • ½ cup heavy cream
  • 1 ½ cups water
  • Drizzle of olive oil

Directions:

  1. In a medium pot add a drizzle of olive oil. Heat over medium. Add the Big brat veggie links and cook on each side until browned. Remove from pan and cool. Once cooled slice and set aside.
  2. Combine the flour and ½ cup water in a small bowl. Stir well and set aside.
  3. In the pot that you cooked the veggie link add the Italian seasoning and tomato paste. Cook over medium heat, stirring constantly for about 1 minute or until fragrant.
  4. Stir in remaining ingredients and cook until thickened.
  5. Stir in veggie link slices, serve hot and Enjoy
