Feta and Spinach Stuffed Chicken
1 (4 ounce) package feta
4-6 boneless skinless chicken breasts
1 box (10 ounces) frozen spinach
Preheat oven to 375. Butterfly the chicken breast (cut it in half almost all the way through, see picture below)
Place a scoopful of spinach and feta onto the chicken breast. Roll up the chicken
Place end side down on a baking sheet. Bake for about 30-40 minutes or until golden.
Let rest for at least 5 minutes before serving. You can slice it into pinwheels for a nice presentation serving.
