Pumpkin Muffins

with

Pecan Streusel Topping

I have probably said it before but I LOVE pumpkin! I made this recipe up and they disappeared before everyone in my family tried them or I got to take pictures. So I worked on another batch. Again they all disappeared, but not before I got a few pictures. Now I am going to have to make another batch of these pumpkin muffins because I only got one! I hope that your family enjoys the recipe as well as mine does.

Pumpkin Muffins with Pecan Streusel Topping Recipe: 

Ingredients:

Muffin Batter
3 cups flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
3 tsp pumpkin pie spice
1 cup of butter (softened)
1 cup of sugar
3 eggs
1 (15oz) can of pumpkin
Streusel Topping
1 cup flour
1 cup brown sugar
2 tsp cinnamon
1/2 cup butter (softened)
1 cup chopped pecans

 Directions:

Preheat oven to 375. In a small bowl sift together the flour (3cups), baking powder, baking soda, and pumpkin pie spice. Set aside
Using a mixer, beat together the sugar and butter until fluffy. Add the eggs one at a time until well blended. Now add the pumpkin. Beat well.
Slowly add the flour mixture to the butter mixture in small amounts until its all combined.
In the bowl you used for the dry ingredients start combining the streusel toppings. First mix together the flour, brown sugar and cinnamon. Now mix in the butter. It works best to use your fingers but a fork works too. Once combined add the pecan.
Fill muffin cups with liners, fill each liner 2/3 full with the batter and top the remaining 1/3 with the streusel topping.
Bake for 20 minutes, or until done (fork will come out clean). Enjoy these Pumpkin muffins with pecan streusel topping #homemadeYUMMY
