Pineapple cupcakes with Coconut icing aka Pina Colada Cupcakes

We are going to a Luau party for our year end homeschooling group. I came up with these to take. I love Pina Colada’s and these cupcakes have an amazing Pina Colada flavor!

The cake

The ingredients:

1 box yellow cake mix

1 can crushed pineapple

2 eggs

½ cup oil

Small amount of water

The Directions:

Preheat oven to 350. Mix together all the ingredients except the water until completely combined.  If batter is too thick add small amounts of water to make it like runny paste. (add in increments of 1/8 cup).

Place in paper in muffin tins and fill 2/3 of the way.  I made mine mini cupcakes. Bake for 10-15 minutes or until toothpick inserted comes out clean.

 

The icing

The ingredients:

1 lb powdered sugar

½ cup butter

1 can coconut milk kept in refrigerator overnight

 

The Directions:

With a mixer cream the sugar and butter together.  This is where it gets a little tricky. Open the can of the coconut milk. You will see a buttery looking grayish white substance.

Scoop out about half of it (leaving the rest in the can) and mix in with the creamed sugar.

Once mixed, you can add small amounts (tablespoons) of the watery part of the coconut milk until the icing reaches the right consistency.  You can use the remaining coconut milk in a smoothie or put in a plastic storage container and place back in the refrigerator for later use.

Ice the cupcakes once cooled.
