Mediterranean Couscous with 4 Leaf Balsamic Fish

Mediterranean Couscous with 4 Leaf Balsamic Fish recipe was created for A Saucy Mama contest. Last fall I was in a Blogger Cooking Competition with World Food Championships. I was introduced to Saucy Mama and her products there. Now I have created 3 amazing recipes to enter in Saucy Mama’s team for World Food Championships. Mediterranean Couscous with 4 leaf Balsamic Fish is the 1st.

My family loved it so much they requested to have it regularly. It’s a FAST easy dinner that only takes minutes to cook. It’s a perfect weekday supper that is sure to please the family. Let the kids help stack them, when you involve kids in the cooking process they are more likely to eat it.
Mediterranean Couscous with 4 Leaf Balsamic Fish Recipe

Ingredients:

6-8 filets of flounder fish
3/4 cup 4 leaf balsamic vinaigrette Saucy mama dressing (extra for topping)
1 cucumber seeded and diced
1 large tomato diced
1/2 lemon juiced
1/2 onion
2 tablespoons olive oil
1 can Foule Muddamas Small Fava Beans
1 package prepared couscous

Directions:

Marinate fish in 1/2 cup of Saucy Mama dressing. Save the remainder for the next step.
Mix together the cucumber, tomato, lemon juice, onion, and the remaining Saucy Mama. Stir to combine and cover with plastic wrap and place in the fridge for about 30 minutes.
In a skillet heat the olive oil over medium high heat. Cook fish on each side until its done. (about 4 minutes on each side).image
To plate this dish I used a large biscuit cutter. I first pressed down the couscous. Then I topped that with the tomato salad, then a layer of beans. Top with the fish and press down gently. Easily remove the biscuit cutter and top with a spoon of the saucy mama dressing. Serve and enjoy!
