Healthier Almond Cookies

Healthier Almond Cookies are a delicious addition to my book of cookies. I decided that adding some coconut oil, stevia sugar, and almond flour would take some of those calories down and add nutrients.

Healthier Almond Cookies Recipe:

Ingredients

  • 1/2 cup butter
  • 1/2 cup coconut oil
  • 1 1/2 cups Steviva Blend
  • 2 large eggs
  • 1 teaspoon Almond Extract
  • 2 cups all purpose flour
  • 1 cup almond flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1/2 cup sliced almonds

Directions

Preheat oven to 375In a medium bowl mix together the all purpose flour, almond flour, baking soda, cream of tartar and salt. Set aside

In a mixer blend together the butter, coconut oil and Steviva blend. Turn on high and blend for a few minutes or until light and fluffy. Add in eggs one at a time and the almond extract.

Add small amounts of the flour mixture into the mixer on low until its all combined. Stir in the almonds.

Place heaping teaspoons of the batter on a baking sheet. Add a few sliced almonds to the top of each cookie for garnish. Bake for about 12 minutes or until the bottoms start to turn golden. Let cool and Enjoy!
