Day 9: Cherry Meringue Cookies


Cherr y Meringu cookies are sweet little bites that are light and airy. They will literally melt in your mouth! These look fancy but are really simple to make and they bake quickly too! You can use any flavor jello. I usually do one batch green and one red. Store these in an airtight container in a cool dry place.

Ingredients:

4 egg whites
¼ tsp cider vinegar
¼ tsp salt
1/3 cup sugar
1 (3ounce) pack of cherry jello
Directions:
Preheat oven to 300. Separate egg whites from yolks. I use a slotted spoon. Just crack the egg onto the spoon (genlty) over a bowl , the white drains below and the yolk stays on the spoon.

In a mixer on high start beating the egg whites until they turn white and foamy. Now add the remaining ingredients and mix until the whites form stiff peaks.Cherry Meringue
Now transfer the dough to a piping bag. I just used a gallon freezer bag and cut the corner off. meringue
Pipe little swirls (or as my daughters call them: poop piles)onto parchment paper. These don’t rise although they do puff a little.

Bake on the middle rack for about 10-15 minutes or until dried out. Cool a little before removing. Enjoy!
