Chipotle Mustard Bacon Roses

Chipotle Mustard Bacon Roses are my 3rd recipe entered into Saucy Mama’s contest to take a team to World Food Championships. These bacon roses are so yummy I dare you to eat only one! Double dare you! You probably won’t even be able to eat the roses in bites. For some reason everyone feels the need to shove the entire piece of bacon into their mouth at once.
Besides the Bacon roses there is an amazing sauce that is perfect over some pasta. The sauce has a little kick from the chipotle mustard and the cheese makes it irresistible. What more do I need to say than cheese and bacon!

Chipotle Mustard Bacon Roses Recipe

Ingredients:

1 cup chipotle mustard by saucy mama
1 cup brown sugar
12 slices thick bacon
3 tablespoons butter
4-6 tablespoons flour
2 cups milk
1 cup Mexican cheese blend
1 pound bucatini pasta (or spaghetti pasta)

Directions:

Preheat oven to 425 degrees. Separate 1/2 cup of mustard in a bowl leaving the rest of later. In a separate bowl place the brown sugar. Dip a piece of bacon in the mustard, rubbing off excess, and then dipping it in the brown sugar. Roll the bacon up and place in a small metal cup/bowl. (mine are for serving sauces). Dip and roll each of the remaining 11 pieces of bacon. Place the cups on a baking sheet and place in the oven. Cook for about 20-30 minutes.
While the bacon is cooking, cook the pasta according to the directions on the package. image
Remove bacon and let cool. Drain 2 of the bacon cups “juice” into a skillet with high sides. Add the butter and flour. Cook for about 2 minutes stirring often. Add the milk, remaining mustard and cheese. Cook stirring constantly until thickened. Pour over pasta and stir to coat. serve with a few bacon roses on each plate and Enjoy!
