Amazing Crockpot Corned Beef

Crockpot corned beef is so easy! This St. Patrick’s toss one in the crockpot and you will have a delicious dinner with very little work! Corned beef and cabbage is a great boiled dinner that was traditional for Irish dinner. My dad grew up eating it and his mom was Irish. So here it is all cooked in the crockpot!

Amazing Crockpot Corned Beef

Ingredients:

1 Corned beef roast
1 tablespoon butter or oil
1 large onion
2-3 pounds red potatoes
Head of cabbage
1 pound baby carrots
Directions:
Slice onion into rings and place in the bottom of a crockpot on high. Place a large skillet on medium/high heat with the tablespoon of butter. Rinse the beef, pat dry, and sear on both sides.
Place in crockpot on top of the onions. I sprinkle the little seasoning pack on too. Cook on high for 2 hours.DSC_8684
Cut potatoes in half and then quarter each half. Place potatoes on top of roast working quickly, the longer the lid is off the more heat escapes. Add the carrots at this time too. Cook for 2 more hours.st pattys day food
Now add the cabbage and cook 1-2 more hours, or until it’s all tender. Remove and enjoy! Watch out it’s so tender it will fall apart. Serve and Enjoy #HomemadeYUMMYIrish corned beef
