Watermelon Refresher Cocktail
A watermelon refresher cocktail is the perfect summer drink. I have sat around the picnic table, grill, and pool with this drink. Actually my kitchen counter too! The watermelon is sweet and refreshing. Add in some wine and lemon lime soda and you have a perfect cocktail.
One of the best things about this recipe is that it prepared ahead of time! I love to do as much prep work the day before as I can. I highly suggest making the watermelon juice ahead of time. If you don’t have time to make it ahead or if you just can’t wait to try this recipe it is still great! You just have to strain the juice. When it sits overnight the pieces float to the top and can be scooped right off.
You can also make my Watermelon Refresher without the wine for the kiddos. Its a great mocktail to serve along side the cocktail version. My kids love to indulge in the “same” drinks that mom has. This is one of those drinks that the kids will be wanting too!
Watermelon Refresher Cocktail Recipe
Ingredients:
4 cups watermelon juice (I used my immersion blender in the whole watermelon)
6 cups wine
2-4 cups lemon lime soda
1/4 cup fresh lime juice
4-6 Mint leaves
Directions:
Cut off the end of a small seedless watermelon. Cut out a small section of watermelon and reserve for garnish. This is necessary otherwise you wear the first few spins of the blade! Place immersion blender in the watermelon and blend until the entire melon is liquified. You could also put chunks of watermelon in a blender and get the same effect. The juice is best when it sits for a few hours, skim off the pieces on top before pouring. You can also strain it if your in a hurry to drink these right away.
In a pitcher mix together the wine, watermelon juice, lime juice, and mint leaves torn in pieces. (easier to remove when bigger pieces) Stir to combine.
If desired add ice to 4 glasses. (I kept all my ingredients cold and served it without ice) Fill each glass about 2/3 full of the watermelon/wine mixture. Fill the remainder with lemon lime soda. Garnish with watermelon and a mint leaf. Serve chilled and Enjoy!
