My daughter Tarrena helped me come up with the name for this, although we all sat around brainstorming it! We love watermelon in the summer. We go through quite a few of them throughout summer. Sometimes we will buy a couple at a time and then we need to hurry up and use them up. I try to come up with some new recipes. This one is perfect because its nothing but a watermelon!

Watermelon Freeze

Ingredients:

1/2 watermelon any size

Directions:
Cover watermelon with plastic wrap. Place in the freezer overnight or until frozen solid.

Freeze watermelon

Take out and place on a cookie sheet. Using a fork, scrap the watermelon and place in a bowl. Eat while still frozen.
scrap it loose

We tend to eat it with forks over the watermelon. We don’t go a fancy with dishes. You can place the scrapings in the freezer again to harden for a minute.
