Sensational One Pot Chili

I grew up with my mom making chili about once a winter. She used some seasoning pack and kidney beans. I never made it when I moved to Florida, it never seemed cold enough to need chili. The winter I was pregnant for my last child it got cold enough in Florida to need chili. My sister in-laws and I decided we would have a chili cook off. I searched so many recipes online and found out I wanted a variety of beans and meats. I wanted a little kick too. This is what I came up with: Sensational One Pot Chili.

We never did have a cook-off but I did find a love for chili. Now I make about 4 pots of this every winter. This makes a huge pot. My family of 7 eats about half and we freeze the other half.

Sensational One Pot Chili

Ingredients:

1 package Italian Sausage links
1 pound ground beef
1 pound ground sausage
1 pound ground chicken
1 poblano pepper seeded and finely chopped
1 bell pepper chopped
2 onions chopped
4 cloves of garlic minced
1 can black beans NOT drained
1 can red beans, drained
1 can pinto beans, drained
1 can cannellini beans (white kidney), drained
2 cans spicy chili beans, NOT drained
2 cans kidney beans, drained
4 cans stewed tomatoes.
1 46 oz can V8 juice
1 bottle of stout beer (can be omitted)
4 tablespoons of chili powder

Directions:

In a large stockpot, start by browning the sausages and then setting aside (I use a large pan for all the browning parts), I brown each of the ground meats and remove like the sausages. In the drippings from the meat now cook the peppers, onion, and garlic. Drain and place with the meats.

Now mix all the ingredients in the same huge stock pot. Heat on Medium-High until it starts to bubble. Reduce heat, cover, and simmer. I have eaten in as soon as 20 minutes or let it cook for 8 hours. The longer it cooks the deeper the flavor and it thickens some with the longer cooking. Anywhere in between will be fine! Enjoy!!
