Peppermint Buttercream Icing
I created this recipe for peppermint buttercream icing to go on my moms mayo cake. Let me just say it was perfect! We devoured it so quickly that you would of thought we were all starved and hadn’t just ate a large dinner just over an hour ago.
There is a great mint flavor to this recipe but I do suggest chopping up some peppermint candies or old candy canes and sprinkling on top just for a pretty garnish. This peppermint buttercream icing is not to sweet and has a little bit of flour to help it stay stiff and cut the sweetness! Don’t worry you can’t taste the flour. I also replaced the milk with water so it can be left out and not spoil! My family didn’t even notice the difference!
Peppermint Buttercream Icing Recipe
Ingredients:
1 cup room temperature buttercream
1 teaspoon flour
4 cups powdered sugar
1 1/2- 2 teaspoons peppermint extract
2-4 tablespoons cool water
a few mint candies crushed
Directions:
In a medium sized bowl beat your butter on high for 1 minute. Add the flour, scrap down the sides and beat again for about 30 seconds.
Depending on the type of mixer your using you will add different amounts of the powder sugar. If I use my kitchen aid stand mixer I will dump all the powder sugar in at one time. If I am using my handheld mixer I add small amounts of the powdered sugar. So, now is the time to add the sugar.
Once the sugar is incorporated you can add the peppermint extract. You will add the water slowly. One tablespoon at a time until you have the consistency you desire. Sprinkle on crushed mint candies if you like. That is all just Enjoy!
