The recipe calls for making homemade marinara sauce from fresh tomatoes. You could skip this step and purchase some. Making it fresh is way more amazing! The one step you really can’t change is getting a good gluten free pasta. I use Tresomega, its a brand I know works in feeding my finicky family. Gluten Free Spaghetti with Meatball Appetizers Recipe

Ingredients:

1 package Tresomega Gluten Free spaghetti
Marinara Sauce:
2 tablespoons coconut oil
3-4 cloves garlic, minced
6 medium tomatoes, peeled and seeds removed
1 teaspoon salt
1 teaspoon honey
1 teaspoon dried basil
1 teaspoon dried oregano
Big pinch of crushed red pepper flakes
1 teaspoon balsamic vinegar
Meatballs:
3 large basil leaves, chiffonade and slightly chopped
1 pound lean ground beef
1/2 cup Parmesan
2-3 cloves garlic, minced
1/2 teaspoon salt
Garnish:
Mozzarella pieces
Basil leaves

Directions:

Start the marinara first. In a deep skillet, add the oil with garlic. Heat on low. Dice tomatoes and add to the oil. Cook down for about 5 minutes and add the remainder of the marinara ingredients. Let cook on low stirring for at least an hour. They longer you cook it the better the flavor will be.

Heat oven to 350. In a bowl combine the ingredients for the meatballs. Mix well. Place a sheet of parchment paper on a baking sheet. Roll meatballs about 1 inch or bite sized and place on baking sheet. These won’t shrink much because their lean beef. Bake for 10-15 minutes or until cooked.

Cook pasta according to direction on the box. Drain and add a 1/2 teaspoon coconut oil. Mix well. Twirl about 4-5 strands of pasta on a fork. Add a piece of cheese and a basil leaf. Finish with a meatball. Repeat over and over. (It goes pretty fast after the first few) Drizzle the marinara sauce over the spaghetti. Serve and Enjoy.
