Fresh Ingredients lead to Fresh Meals
What is important to you in a recipe? For me it is fresh ingredients and low sodium. Fresh Ingredients lead to Fresh Meals. The easiest was to get these two for me is to purchase fresh products. I like my ingredients to be fresh. I want to have that crispness to my vegetables even after they are cooked. consequently there isn’t any sodium added to fresh ingredients. I also like the nutritional values of fresh ingredients.
Fresh ingredients also make my dishes have a better flavor. I noticed a difference when I grew my own vegetables a few years ago. The flavor of those cucumbers picked fresh from my garden was amazing. Unfortunately I do not have time to grow my own. The only alternative I have to growing my own is ensuring that my produce doesn’t have far to travel. Getting my produce as soon after its picked is important. If its shipped from another country or far away its lost days of freshness. Thats why I love Publix so much.
Fresh from Local Farmers
Living in Florida allows me get fresh produce year round. Florida farmers have the advantage of growing year round. This ensures my family gets a variety of fresh ingredients year round. To find out what is in season I visit Fresh From Florida. Along with finding out what the farmers are picking and sending to my favorite store; I also get marvelous recipes using fresh in season ingredients. Mega bonus for me!
Fresh to My Table
One of my favorites right now is Fresh From Florida Shrimp and Clams over Yellow Rice. I have made it for my family about 8 times since tomato season started. Its so easy my husband and daughter even made it while I was out of town. Another is Fresh From Florida Sweet Corn & Black Bean Enchiladas Recipe. I posted about it before and its still a family hit for meatless Mondays.
Florida Shrimp and Clams over Yellow Rice is a one pan dish that is made in under 30 minutes. It has fresh onion, bell pepper, garlic, tomato and even the seafood is Fresh from Florida. Clean up is simple because you don’t have to dirty 5 pans to get this beauty. Its such an easy meal I made it into a little video. Doesn’t it just make your mouth water? It does mine even though I ate it again for dinner last night!
Fresh Filled Recipe

Florida Shrimp and Clams over Yellow Rice Recipe
Ingredients:
•1 pound large Florida shrimp, peeled and deveined
•20 Florida middleneck clams, cleaned (or littleneck clams)
•1 pound smoked sausage, sliced
•2 Florida tomatoes, diced small
•2 Florida bell peppers, seeded and chopped (your favorite color)
•1 medium onion, chopped
•1 tablespoon olive oil
•¼ stick butter
•4 cloves garlic, chopped fine
•1 tablespoon seasoning blend (blackened, seafood or your favorite)
•¼ cup fresh parsley, chopped
•1 package yellow or Spanish rice
•sea salt and fresh ground pepper, to taste
Directions:
Prepare rice mix as directed on package.
Preheat a large sauté pan over medium-high heat and add the olive oil.
Add onion, peppers, garlic and sausage. (I waited to add the garlic so it didn’t burn)
Cook ingredients until slightly caramelized, about 4 minutes.
Add shrimp, clams and seasoning blend.
Stir ingredients and cover.
Cook ingredients until shrimp are almost cooked throughout and clams have started to open, about 4 minutes. (this took a total of almost 10 minutes, stirring half way in between)
Add diced tomatoes and butter.
Stir ingredients to combine.
Taste and adjust seasoning with salt and pepper. Serve over cooked rice.
Garnish with chopped parsley. (I added a squeeze of lemon juice also)
