Throwback Thursday Onion Stuffed with Meatloaf

Today is throwback Thursday and a day that I will be updating an old recipe. It also throwback to my days as a little girl, my mom worked night and my dad made dinner. Every Thursday was meatloaf night. My dad burned everything when mom first started nights. Now he is a pretty good cook.

Meatloaf is actually pretty good with a little char to it. My dad could make any kind of meatloaf. He would make Italian ones with marinara sauce, Mexican with salsa and so on. Some were really good (probably the ones I remember) and some weren’t so good! I remember how much pride he took in making it. I loved to see his smile when we tasted that first bite and loved it. His whole face lit up.

The recipe I am adding is for Onions stuffed with meatloaf. I came up with it from two places. My dad’s meatloaf and the Girl Scout hobo meals we had when I was a wee brownie. I hope you enjoy it as much as my family did tonight. I served it with mashed potatoes and corn.

Onions Stuffed with Meatloaf

1 lb ground meat of your choice (I used beef)

¼ cup bread crumbs

2 eggs

3 tbsp worchestire sauce
2 green onions finely chopped greens too

2 tbsp fresh chopped parsley

1 tsp garlic powder

2 large onions  used to stuff (ends cut off, then cut in half two pockets) see pictures below

 

Preheat oven to 400. Lightly grease a baking pan. Mix together meatloaf mixture which is all ingredients except the large onions. Cut the ends off the onions. Then cut in half like so

Now carefully separate the layers like so

Until they get small. You can save these to use for another night, in another recipe. They freeze well to, just chop them up first.  Now take one layer and fill with meatloaf mixture. Next use another layer of onion to complete the other side. Continue until the meatloaf mixture is gone. Bake 30-40 minutes. Can be topped with ketchup to get the real throwback experience!
