Southern Collard Greens
Collard Greens is definitely a southern food. Growing up in Michigan I never really heard of them. I got lucky the first time I tried collard greens they were cooked perfectly. I soon was attempting to recreate that amazing southern collard greens. It took me a while to perfect it but I think I made them ALMOST as amazing as that first time trying them! So here is my recipe for Southern Collard Greens. Its really simple and easy!
Southern Collard Greens
Ingredients:
1 pound of collard greens washed and chopped
1 ham hock
2 cloves garlic sliced
1 large onion chopped
1 large bell pepper chopped (you can add a hotter pepper if you like a little heat)
1 tsp salt
1 tsp pepper
2 tbsp sugar
Directions:
if you bought pre-washed collard greens, still rewash them. Collards are dirty! If they aren’t pre-washed soak them in cool water, swishing them around good and then let them soak for 10 minutes, the dirt will sink to the bottom. Now just be careful not to disturb the water to much.
Now toss all the ingredients in a large stock pot. Cook on high until it begins to boil. Cover and reduce heat to low. Simmer for 2-4 hours (the longer the better) or until the collard greens have turned a nice deep green color. Let cool a little before serving they are always extremely hot!
